Vineyards:
Shiraz sourced from 2 different blocks to fill each other in. 30% comes from Botrivier area and 25% comes from the Swartland area. The Carignan also hails from the same soils in the Swartland, where they are grown in bush vines under dry land conditions. Mourvedre and CInsaut comes from the rich soils of Wellington. Grenache is grown in Paarl. All except the Swartland grapes are trellised and irrigated.
Winemaking:
Wine is very fruit driven. Currents and tart fruits are the dominant flavours, with hints of spice, especially cloves. Wine has a very smooth and integrated tannin structure, which makes for smooth drinking. Medium to full bodied. Wine is matured in French oak casks for 16 months. This wil ensure that the fruit, acidity and oak are in perfect balance. Wine can be put down for at least 3 years.
Tasting notes:
Serve with all meat dishes,as well as tomato-based pasta dishes and Thai curries.
