  • Chai cupcakes with marshmallow frosting

    It's the last month of Autumn, which means that the cold Winter months are just around the corner. Warm things up by baking some tasty treats, we can't get enough of these Chai cupcakes with marshmallow frosting by The Kate Tin. Yum!

    Makes 12
    125g Stork Bake
    150g castor sugar
    1 tsp vanilla extract
    1 cup self-raising flour
    1/2 cup milk
    1 tsp chai spice
    2 eggs

    Marshmallow frosting
    1/2 cup castor sugar
    1 tsp vanilla extract
    2 egg whites

    Cream the margarine, sugar and vanilla together until light and fluffy. Gradually add the eggs and beat well. Sift over the flour and spices and beat again. Spoon into a muffin tin lined with cupcake wrappers and bake at 180C for 12-15 minutes or until golden and a skewer comes out clean.

    Make the frosting by whisking the egg whites in a heatproof bowl until soft peak stage. Add castor sugar and whisk over simmering water until the meringue is hot to the touch. Remove from the heat and beat on high with a hand mixer until cool. Whip in the vanilla. Place in a piping bag and pipe onto cupcakes immediately.

  • Mother’s Day breakfast brûlée

    This Sunday is Mother's Day, a special time to honour and pamper your mom. We think that the perfect Mother's Day should start with breakfast in bed, which is why we adore this beautiful breakfast idea by The Kate Tin blog.

    Ingredients:
    ¼ cup raspberries pomegranate rubies 1 tsp rose water (optional)
    ¼ cup toasted muesli
    1 small pot fat-free plain yoghurt
    1 tbsp light brown sugar

    Place the raspberries and a few pomegranate rubies in a small bowl and sprinkle with rose water. Spoon some of the muesli into the bottom of a pretty teacup then top with a layer of yoghurt.

    Next, sprinkle the marinated fruit over the yoghurt and repeat until the cup is full, ending with a layer of yoghurt.

    Just before serving, sprinkle the brown sugar on top and caramelize with a blowtorch or under a preheated hot grill until golden, melted and crisp. Garnish with extra berries and serve.

  • A French Love Story: Part 1

    If you thought romance was passé in Paris, all you have to do is look at Paris bridges to see it is being displayed in full force. The Paris “love locks” are back.

    The love padlocks have been a phenomenon in cities as varied as Belgium to Japan.

    For those of you who haven’t heard of them, here's the story. A couple writes their names on a padlock and locks it onto one of the bridges. They then throw the key into the Seine River as a symbol of their undying love.

    As BonjourParis reported last year, the locks on the Pont des Arts near the Louvre were cut off, reportedly by the government. But romance beats politics in Paris and the locks can now be seen on two Paris bridges: Pont des Arts and Pont de l'Archevêché.

The skies may have been grey, but that did nothing to dampen the spirits of this gorgeous occasion. Elegant floral decor by Fresh Collection included a symphony of cream and white blooms, such as tulips, roses and lilies. Tables were tastefully adorned in shades of white and accents of deep blue.

    Winter can be a wonderfully atmospheric time to hold a wedding: cosy venues, hearty food and the warm glow of candle light immediately spring to ming. But even if it's cold outside, there's no reason that you can't have a wedding dress and decor that still has a sense of lightness and delicate romance. Add lace sleeves to your dress for extra warmth, serve guests frothy cups of hot chocolate, create dreamy cream-coloured bouquets from seasonal flowers and add some sparkle with diamante. Winter will never have felt so fresh!

  • Val de Vie Estate hosts the Infiniti 4 Nations Invitational Polo Tournament

    Val de Vie Estate hosted the Infiniti 4 Nations Polo Invitational Polo Tournament on the 20thApril 2013 and the event has been described as a great success. With Infiniti as the head sponsor, the invitational teams included Nigeria, Pakistan, Holland and South Africa.

    The event ended the polo season on a high note and highlighted how the sport has enjoyed phenomenal growth and recognition in the past year. Alec Combrink, Infiniti Cape Town’s Dealer Principle, observed that "Infiniti Cape Town is proud to be part of the Infiniti 4 Nations Polo event at Val de Vie and feels that the event is a wonderful opportunity to expose potential customers to our luxurious brand."

    Mr Combrink opened the Plate Final, which saw Nigeria taking on Holland in a fast paced match and Nigeria winning 6-4.  Several of the competing ponies were supplied by Val De Vie Polo Club and were in top sporting condition.

    South Africa played against Pakistan in an exhilarating Final Match in which Pakistan won 5-2. The winning team was awarded the glittering trophy by Michele Stuurman from Carrol Boyes along with generous prizes from Rudy Project, Polo SA, Val de Vie Wines, Polo World and asparkly Cap Classique from GM & Ahrens.

    The tournament was commentated byMr.Gavin Kanigowski from Cape Town Polo Club and kept guests on the edge of their seats and up to speed with the rules of the sport. Olympic medallist and Val de Vie Estate Marketing Director, Ryk Neethling was MC of the event, while Val de Vie Events coordinated all the elements of the day. Chic, corporate-inspired decor with shades of black and white set the scene for guests to enjoy the polo, relax and network. Gentleman guests, not to mention some curious ladies, were treated to get a feel of driving some of the elegant Infiniti cars on display.

    Charl du Plessis was named as the Most Valued Polo Player, while the Best Playing Polo Pony prize went to Bubbles, who is owned by Mr. Martin Venter and ridden by Mr. Lance Anderson. The day ended with three cheers saluting the polo ponies' valorous play and guests enjoyed the rest of the evening celebrating in the Polo Club Restaurant and Pavilion.
